The new dietary guidelines have spoken: Eat more vegetables!

New dietary guidelines just released by the U.S. Departments of Agriculture and Health and Human Services tell us what many of us know but have been reluctant to do: “Enjoy your food, but eat less.” According to the guidelines, Americans eat too much food but not enough that’s actually good for them—astonishingly, as many as 75-95% of Americans aren’t getting enough vegetables, which provide nutrients important for good health.  So choose an assortment of vegetables, in a range of different colors, to make sure you are getting a variety of vitamins and minerals daily.  The new guidelines encourage Americans to fill half of their plate with fruits and vegetables, then use the rest for lean protein, low-fat dairy and whole grain.
